How to prep your breakfast the night before to save time
I have been getting up at four in the morning for eleven years and I will tell you the thing that actually matters: at four in the morning you cannot make decisions.
The value of preparing the night before is not the ten minutes saved. It is that you removed the need to think.
The rule I work to
Everything that can be done the night before is done the night before, and the morning consists only of actions.
That means the kettle is filled. The coffee is ground and in the machine. The bowl is on the counter with the spoon in it.
It sounds excessive written down. It is the difference between leaving on time and not.
The things that genuinely work overnight
Overnight oats. Equal parts oats and liquid, a jar, a fridge, twelve hours. Add yoghurt for thickness, and add anything else in the morning. This keeps three or four days, so make several at once.
Chia pudding, same principle, and it sets more firmly.
Egg bites or a crustless quiche baked at the weekend and reheated. These keep four or five days and they reheat in a minute.
Breakfast burritos, assembled and frozen individually. These are the best thing on this list for a household with different schedules, because each person takes one.
Pancake or waffle batter, made the night before and kept covered in the fridge. It is arguably better the next day.
Baked oatmeal, one dish, cut into squares, a week of breakfasts.
The things that do not work
Toast, obviously, and I mention it because people try to work around it and it is not worth it.
Anything with avocado, which browns.
Cut apples and pears, unless acidulated, and then they taste of lemon.
Assembled sandwiches with anything wet in them, which go soggy overnight without exception.
Scrambled eggs reheated, which turn rubbery. Eggs cooked into something else, a frittata or a bake, reheat fine. Plain scrambled do not.
The setup matters as much as the food
Put out the bowl, the spoon, the mug and the plate before bed.
Set the coffee machine on a timer if it has one.
Put anything from the fridge on the middle shelf at the front, so it is the first thing you see.
If you take a lunch as well, make it at the same time. One session of work, one lot of washing up.
The five minute version
For anyone who will not do any of the above, and I understand, there is a minimum.
Fill the kettle. Put out the mug. Decide what you are eating.
That is three actions taking ninety seconds and it removes the morning's only real decision.
What I actually eat
Porridge, made on the stove, most days, because I am at work by half past four and I eat at the bakery.
On days off I make the same overnight oats I recommend, which feels like cheating and is not, because they are good.
The honest note
There is a version of this advice that involves a Sunday of batch cooking and twenty containers, and it works for some people and it fails for most.
What works long term is small and dull. One thing prepared the night before. The bowl on the counter.
I have watched a lot of people, including myself, abandon an elaborate system and keep a small one, and the small one is what actually gets you fed.
What keeps in the fridge and for how long
This is the part people get wrong, and it is the reason a good habit lasts three weeks and then stops.
Overnight oats are good for four days, five at a push. After that the texture goes from soft to sludge. Make three jars on Sunday, not seven.
Chia pudding holds up slightly longer because it sets rather than softens, so five days is realistic.
Egg bites and a crustless quiche keep four to five days refrigerated and freeze well for a month. I bake a tray on Sunday and freeze half immediately, because anything I can see in the fridge on Monday gets eaten by Wednesday.
Breakfast burritos freeze for about three months. Wrap each one individually in foil, then put the lot in a bag, and write the date on the bag.
Pancake batter with baking powder in it loses lift after about a day, so make it the night before and not two nights before. If you want it to hold longer, leave the raising agent out and whisk it in when you cook.
Baked oatmeal keeps five days and is one of the few things on this list that is genuinely as good on day four as on day one.
The freezer is the part people skip
A freezer turns a weekly habit into a monthly one, and for anyone with an unpredictable schedule that is the difference.
Freeze in single portions, not in a slab. A slab means defrosting the whole thing, which means you will not do it.
Label everything with what it is and the date. I have opened enough unmarked foil parcels at four in the morning to be firm about this.
Reheat burritos from frozen, wrapped, in a low oven if you have twenty minutes, or unwrapped in a microwave if you have three. The oven is better and the microwave is what actually happens on a Tuesday.
A word about the washing up
The reason night before preparation fails is almost never the cooking. It is that you have made another lot of washing up at the end of a day when you are already finished.
So keep it to one bowl and one spoon. Every recipe in this article can be made in a single container, and the ones that cannot are not worth the trouble for a weekday breakfast.
Wash as you go, or put the bowl in the sink to soak and deal with it in the morning while the kettle boils. Two minutes then is easier than ten minutes now.
